Elegant Elephant Baking Co., (EEBC) was founded in 2012 by Jessie Scarola. It was inspired by Jessie’s passion for a healthy lifestyle, community, and baking when she moved into a gluten-free lifestyle in 2005. Her driving force to open a 100% Gluten-Free Bakery was her recognition of the dismal selection of celiac-friendly pastries and treats. Excited to provide options to the community, she took her highly-praised homemade recipes into the Incubator Kitchen at Hummingbird Wholesale and created a whole line of gluten-free desserts and pastries.
